The hosts, who sacked manager Ian McCall in midweek, showed admirable spirit to twice come from behind, but were ultimately undone by Bellamy's third ten minutes from time.
The Newcastle loanee opened his account after just five minutes when he turned home a Jackie McNamara cross from close range.
The Terrors responded well and restored parity midway through the half when Jim McIntyre fired home after good work from Tony Bullock.
Celtic went in ahead at the interval as Bellamy latched on to an Ulrik Laursen through ball to slot home on 33 minutes.
However, they were pegged back 20 minutes from time when McIntyre turned provider for Barry Robson who finished confidently from 15 yards.
Bellamy's third and most vital contribution arrived ten minutes from time, latching on to a Chris Sutton knock-down he gleefully buried the winner to move his side two points clear of Rangers at the top of the SPL.
